Monk: In the following video, YouTuber Joshua Weissman is joined by private chef/Instagram star (and new Texas resident) Olivia Tiedemann on a journey to try the best barbecue in Texas, all of which are on Texas Monthly’s Top 50 list and four of which received Michelin stars last year (CorkScrew BBQ in Spring and Interstellar Barbecue, La Barbecue, and LeRoy and Lewis in Austin).
Joshua and Olivia visit 17 joints in total and rated each one and slotted them onto a big board as they go for both brisket and sides. Starting in Houston, they then make their way to Austin before heading Central Texas, the panhandle, and eventually DFW. Your favorite barbecue editor even makes an appearance at the end of the video.

Monk: Panther City BBQ in Fort Worth, Texas opened in 2014 and is a shining example of bringing Tex-Mex flavors into craft barbecue. Jalapeno sausages and brisket elote cups rub elbows with the brisket and pork spare ribs that you would expect from a craft Texas barbecue restaurant (albeit with some additional flavors).
In this recent video from Eater’s Smoke Point, they follow owners and pitmasters Chris Magallanes and Ernest Morales through a day of prep. Both at the original Panther City location as well as a second restaurant they opened, Fort Worth Barbecue Company, in the former location of Bailey’s Barbecue which had occupied a small building since 1931. While they did change the name, they kept the feel of the building, which is old school, no frills barbecue. Take a look.
Monk: The Mallard Creek Barbecue is back later this month for its 92nd annual event, but with a wrinkle. The barbecue will be drive-through and carryout only this year. That’s right, no dine-in. Per the event’s Facebook page:

Monk: The second annual Carolina BBQ Festival is once again bringing some of the best and brightest pitmasters to the Queen City in early May. Lewis Donald has invited many of the same pitmasters from last year’s festival and added a few new faces: Jake Wood of Lawrence Barbecue, Keith Henning of Black Powder Smokehouse, Michael Letchworth of Sam Jones BBQ, and Tank Jackson of Holy City Hog.
Backyard BBQ Pit has received nearly $50,000 from its GoFundMe campaign and even got new kitchen appliances donated by an angel donor; now they are paying it forward to other local small businesses
