Friday Find: Port-A-Pit BBQ Video Profile

I hadn’t previously heard of Port-A-Pit BBQ, but they are the barbecue catering arm of Koala-T-Katering in Statesville. And apparently they are kind of hard to find if you are looking for takeout from the offices of Koala-T. Here’s another video profile from Our State Magazine from some time ago, similar to the one for Hillsborough BBQ Company we posted a few weeks back. Watch it, if only to hear what is my introduction to the use of the word “rotisserize.”

Our State Magazine profiled Hillsborough BBQ Company in March 2013 and tagged along as they hand pick the hickory and oak they use in their smoking. Twice a week, they manually sort through the wood pile at a local sawmill to be sure they don’t take any sweet gum and poplar, which is not preferred for wood smoking barbecue.

“American Barbecue Styles Explained in Two Minutes” from Eater

This video and its accompanying post is part of Eater’s Five Days of Meat coverage and actually does a pretty decent job explaining the major barbecue styles compared to other attempts I’ve seen – particularly, they get the difference between eastern (whole hog and vinegar sauce) and Lexington (shoulders and tomato/vinegar sauce served with slaw and hush puppies) right. Or maybe the narrator just seems smarter because of his British accent.
